Ingredients for this Lamington Cake recipe
Two eggs
1/2 of a teaspoon of vanilla
Two cups of self raising flour
125 grams of butter, margarine or olive spread
1/4of a cup castor sugar
1/2 of a cup of milk
Lamington Icing ingredients
Two cups of soft icing mixture that has been sifted thoroughly
Two tablespoons of cocoa powder
30 grams of butter
Two cups of desiccated coconut
Three to four tablespoons of boiling water
Lamington recipe cooking instructions
Cream (beat) the butter and the castor sugar together until they are light and fluffy. Then add the eggs one at a time, beating well to ensure a good mix, between each adding each egg.
Sift the flour and then fold into the egg, butter and castor sugar mixture, adding the milk and vanilla during this to keep the mixture smooth.
Pour the lamington ingredient mixture into a well greased 20 x 26 cm approx lamington tin. Bake at 180 degrees centigrade or 350 degrees fahrenheit for 30 to 40 minutes. Turn the freshly baked lamington onto a cake rack to cool.
Lamington cakes icing instructions
Now make the icing for the lamington cake by pouring the boiling water on the butter and then adding the cocoa, and then the sifted soft icing mixture. Beat all ingredients well together.
When the lamington cake is thoroughly cold cut the laminton cake into squares, or rectangles depending on your tastes. Using a long pronged fork dip each square or rectangle of lamington into the chocolate icing and then into coconut. This covers each piece in icing and then sticks the dessicated coconut to the lamington
Leave the freshly iced lamington pieces to set on a cake rack.
