Fruitloaf ingredients
375 grams of mixed dried fruit
½ cup of hot black tea (Lapsang Souchong is great, Earl Grey is also good)
1 teaspoon of mixed spices
1 teaspoon of cinnamon
¾ cup of soft brown sugar
3 eggs
1 cup of self raising flour, sifted.
150 grams of dried almonds
200 grams vanilla yoghurt
You will also need a 10x21cm loaf baking tin and non stick baking paper.
And two mixing bowls to make your fruit loaf.
Fruit loaf cooking instructions
First mix the dried fruit, the tea, mixed spice and the cinnamon in a small bowl and leave soaking for 3 hours. This will help the flavours blend evenly.
Heat your oven to 180 degrees centigrade and line your baking tin with the non stick baking paper.
Beat the eggs and sugar together, then stir into these the flour, almonds and yoghurt. Fold the pre soaked fruit through this mixture, then spoon into the prepared baking tin.
Place the baking tin with the fruit loaf ingredients into your oven, and bake for 1 hour 30 minutes, or until cooked. If the loaf top browns too much before the fruit loaf is cooked, cover the top of the baking tin with tinfoil.
Once your fruit loaf is cooked, leave the loaf in the tin for five or ten minutes to stand. Turn it over and out of the tin. Once your fruit loaf has cooled, slice and serve. You should get around ten slices of fruit loaf per serve, and these can be cut into halves or quarters depending your guests!
