Ingredients for chocolate mousse (serves 8)
600 mls of custard
300 mls of thickened cream
250 grams of quality dark chocolate. Break into pieces
White chocolate, grated.

Put the chocolate and the custard together in a heatproof bowl over a pot of simmering water (rest it above the water, not touching the water).
Use a long handled spoon to stir until the chocolate has melted and the chocolate mousse mixture is smooth. Set the fresh chocolate mousse ingredients to one side for fifteen minutes or so to cool.
Using an electric beater, whisk the cream in a bowl until it forms soft peaks. Add the lightly whipped cream to the chocolate mixture and gently fold them together until combined.
Spoon evenly into eight glasses of approx 200 mls size.
Cover your fresh home made chocolate mousse with glad wrap and put them in the fridge for until set. This time will vary depending on how cold your fridge is, but usually at least an hour.
Sprinkle your fresh chocolate mousse with the grated white chocolate before serving to your very appreciative guests.
