Ingredients for chocolate mousse cake (serves 4)
2 tablespoons of golden syrup
Some melted chocolate, to decorate your cake with
Four eggs
1 tablespoon of castor sugar
500 grams of dark chocolate
1 tablespoon of sifted plain flour
Chocolate sorbet to serve with your cake
125 grams of unsalted butter
Coffee mascarpone ingredients
200 grams of mascarpone cheese
2 tablespoons of your favorite instant coffee
2 tablespoons of icing sugar
Preparation instructions for chocolate mousse cake.
Firstly, heat your oven to 220°C. Then grease the base of a 20cm round spring-form cake pan and line it with non-stick baking paper.
Next, melt the chocolate, the golden syrup and the butter in a bowl. Do this by placing the ingredients in a bowl held over a pot of gently simmering water. Set the melted ingredients to one side to cool a little.
Now use an electric mixer electric hand beater to beat the eggs and the sugar. Do this on high setting for 10 minutes or until the mixture is very thick and pale. Then fold in the flour to the eggs and sugar and then fold in the chocolate mixture until all ingredients are well combined.
Now pour this ingredients mixture into the cake or baking pan and bake on the middle shelf of your oven for 12 minutes.
After this, remove from oven and separate the cake from the baking pan by running a knife around the edge of the cake.
Place the cake in the fridge for 1 hour to cool – this must be done, as it is needed to set the middle of the cake.
While the chocolate mousse cake is in the fridge, make the coffee mascarpone. First, dissolve instant coffee in 1 tablespoon of boiling water and allow to cool. Then beat the mascarpone, coffee and sugar together using a bowl, until the mixture has a stiff texture..
Now to serve! Yum Yum!
Slice serve with a serving of the coffee mascarpone, and a portion of sorbet on the side. Ice cream could perhaps be used in place of sorbet, if needed or desired.
