Ingredients for this chicken nuggets recipe (makes about 12)
Two tablespoons of plain flour
Two cups of cornflakes
500 grams of fresh chicken breasts
Two egg whites
Tomato or barbecue sauce for dipping the chicken nuggets in.

Preheat your oven to 200 degrees celsius. Process the cornflakes in a food processor until the chopped up cornflakes mixture looks like breadcrumbs.
Place the chopped cornflakes in a bowl. In another bowl place the flour and season the flour with a little salt and pepper. In a third bowl whisk the egg whites with a fork until the egg whites are a little foamy.
Remove all the fat and any skin from the chicken and cut the chicken into bite size pieces. Toss these chicken pieces in flour then dip the floured chicken pieces in the egg white and then roll the chicken nuggets in the cornflakes until the chicken nuggets are completely coated.
Greaseup a baking tray with the olive oil and place the chicken nuggets on the tray. Bake the fresh chicken nuggets in your oven for 10 to 15 minutes until the chicken nuggets are crisp and cooked all the way through.
Serve the fresh home cooked chicken nuggets with tomato or barbecue sauce in dipping containers.
