Ingredients for this biscuit people with icing recipe (approx 40 biscuits)
250 grams of chilled unsalted butter that has been chopped up.
Two cups (300 grams) of plain flour
3/4 of a cup (165 grams) of caster sugar
One egg
1/2 of a cup (75 grams) of icing sugar that has been sifted
Two tablespoons of lemon juice

Blend the butter and the flour in a food processor until the biscuit ingredients mixture resembles fine breadcrumbs. Then add the caster sugar and mix to combine. Add the one egg and process again until the biscuit mixture comes together.
Turn out the biscuit ingredients mixture onto a floured surface and knead for 1 minute or until smooth. Divide the biscuit dough in half, press into discs using a cookie cutter, enclose in plastic wrap and chill for 30 minutes.
Preheat your oven to 180°C. While it is heating, line 4 baking trays with baking paper. Roll dough out on a floured surface to 4-5mm thick.
Using an 8cm gingerbread man or other shaped biscuit cutter as you have available, cut shapes from the biscuit dough and place on trays. Re-roll dough scraps once and cut more shapes.
Bake the biscuit people for 8-10 minutes until the biscuits are light golden. Cool the fresh home made biscuit people on trays.

Mix the icing sugar and the lemon juice in a bowl, then spread the icing mixture over the biscuits with a palette knife or the back of a spoon. Leave the freshly iced biscuits to set for 1 hour.
