Ingredients for this cookies or biscuits recipe (makes about 25 biscuits)
200 grams (1 cup, firmly packed) of brown sugar
85 grams (1 cup) of desiccated coconut
70 grams (1/2 cup) of pecans, coarsely chopped
2 eggs
50 grams (1/4 cup) of dark choc pieces
150 grams (1 cup) of plain flour
90 grams (1 cup) of rolled oats
80 grams (1/2 cup) of diced dried apricots
125 grams of butter, melted and cooled
1 teaspoon of vanilla essence
Preparation instructions for apricot and chocolate cookies or biscuits
Preheat the oven to 180°C. Line 2 large baking trays with non stick baking paper. Sift the flour and sugar into a large bowl. Add the oats, the coconut, the apricot and pecans and stir together until they are well combined. Then make a well in the centre.
Whisk together the melted butter, the eggs and vanilla in a small bowl. Add the egg mixture to the flour mixture and stir together until they are well combined.
Use your hands to roll heaped tablespoonfuls of the cookie or biscuit mixture into balls. Place these biscuit mixture balls, 5cm apart, on prepared trays. Press 3 chocolate pieces into each ball, then flatten slightly until about 6cm round. About yummy biscuit size.
Get a mummy or daddy to supervise baking in the oven for 15 minutes or until your chocolate and apricot cookies are golden brown and smelling divine. Transfer the fresh biscuits to a wire rack and set the cookies aside to cool.
