Preparation and cooking instructions for fresh baked animal biscuits
Preheat your oven to 180° Centigrade . Line 2 baking trays with some non-stick baking paper.
Using electric or manual beaters (if anyone still remembers these) , cream butter, sugar and vanilla at a high speed until light and creamy. Beat in the egg yolk. Then beat in the flour and the cornflour at a low speed until a smooth dough forms. Gently knead the dough on a lightly floured surface. Wrap the dough in plastic wrap (cling wrap or glad wrap) then refrigerate for 30 minutes or until firm.
Roll out the biscuit dough using a rolling pin between sheets of non stick baking paper until 5mm thick. Refrigerate for 20-30 minutes or until firm.
Cut out different animal biscuit shapes from the animal biscuit dough using 6-7cm cookie cutters. Re roll any leftover biscuit dough and repeat this process. Place the animal biscuits on the baking trays, leaving about 5 centimeters between each.
Bake the animal shape biscuits, or cookies for 12 minutes or until the biscuits are pale golden. Remove the animal biscuits from the oven, cool the biscuits on a tray for about 5 minutes.
Transfer the biscuits to a wire rack to cool completely. Decorate the freshly made animal biscuits with icing or dust with icing sugar
